Endless West is looking to radically disrupt the alcoholic drinks industry by using analytical chemistry and spectometry to reverse engineer spirits. The team isolate the key molecules creating flavor, color, and mouth-feel, and extract them from alternative natural sources. The result is a comparable product that can be achieved with a fraction of the time and cost, using substantially less water and agricultural land, and producing fewer emissions.
The company’s first products, Glyph whiskey and Kazoku, are already on the market, and provide a useful demo for Endless West’s end goal. The aim is to partner with beverage companies looking to cut down costs or boost green credentials by switching out existing molecule sources for more cost and labor efficient ones - or even just create digital archives of their products.
The company has branched out into private-label spirit manufacturing with Blank Label, Endless West’s B2B arm. This will help it establish a firm business foundation to compete with similar molecular reverse-engineering foodtech companies like Voyage Foods and Atomo (looking at food and coffee respectively). If Endless West can scale up its production and business relationships, it could carve out a lucrative and novel niche for itself.
