Our take

Vegan food has been rapidly evolving, so much so that some companies are recreating the exact taste and texture of real meat and seafood products. While most companies work with legumes, soy, or root vegetables when mimicking fish products, Esencia Foods is the first startup in Europe to make vegan seafood from mushroom mycelium.

The company is disrupting the food industry with its meaningful and lasting solution to help save the oceans and support healthy food ecosystems. 80% of the world’s fish are overfished, and with oceans projected to be depleted by 2048 the need for sustainable alternatives is now.

Currently creating scallops and salmon, the company is looking to secure partnerships that will help perfect its products – such as a plant-based fat company to mimic the fatty texture of smoked salmon. Esencia Foods is planning on launching its first products in restaurants by the end of 2023 and then plans to expand into retail.
