Our take

Hoxton Farms' fundamental goal is to produce cost-effective cultivated fat to help replace meat on every plate, in every recipe, in every corner of the world. It does this by bringing together mathematical modelling and machine learning with synthetic and computational biology skills.

Animal fat is the secret to delicious food, and plant oils alone can't replace it: some are bad for the environment - like coconut or palm oil - and most lack the flavour and properties of animal fat. Hoxton Farms solves this issue by growing real animal fat without the animals.

Starting with only a few cells, Hoxton Farms grows purified animal fat in reactors to create an ingredient that is sustainable, cruelty-free and delicious; while tasting, cooking, and looking like real animal fat. This provides the world with a clean source of animal fat, helping power the transition to a more ethical and sustainable future.

The current techniques for culturing animal cells are expensive, but Hoxton Farms' mathematical and computational modelling dramatically reduces the cost of cell culture, meaning that its product is cost-effective at scale. The company has seen significant funding over the years, the latest of which is helping to build its pilot production facility in Shoreditch, as well as further develop its customer partnerships to demonstrate the value of its offering.
